Cheese Straws
Ingredients
6 oz butter
8 oz flour
8 oz (2 cups) grated cheese
Â― tsp salt
Â― tsp pepper, optional
1 tsp. mustard
2 eggs, separate yolks from white
ž cup cold water
Preparation

* Rub the butter into the flour. Add the grated cheese, salt, pepper and mustard and mix thoroughly.
* Add beaten egg yolks and cold water to make a stiff dough.
* Roll out about ž in thick. Cut into strips 2Â― in x Â― in and twist like "twittlers" or make into any variety of shapes desired.
* Place the straws on a baking sheet and bake at 400°F for about 15 minutes, or until golden brown.

I think those recipes came from 'What cooking in Guyana', they were written at a time when lots of foreign foods were banned, hence fresh fish instead of saltfish, yams intead of white potatoes etc.

I have a copy of "What's Cooking in Guyana" Brought it with me to NY - 1981.

I remember making mashed yam or cassava to serve as mashed potatoes.

Making Cassava chips et al in Guyana.

Using channa to make cook-up rice...
