Duck Truck MTL (Montreal, QC)

You've got to hand it to the proprietors of this Montreal food truck that only serves one thing: duck. As if that's not unusual enough, the manner in which the duck is prepared is inventive and kind of mind-blowing, including duckitos and a duck hot dog served with naan bread and Greek tzatziki sauce.

Fully Loaded T.O. (Toronto, ON)

If you ever find yourself with a big craving for chicken wings, you'd be hard-pressed to do better than Toronto's Fully Loaded T.O. and their ginormous stuffed wings. Stuffed with what, you may ask? How about mac and cheese, or mozzarella and pepperoni for a magnificent melding of wings and pizza in one delightful dish. A fan favourite is the Into the Blue, featuring juicy, crispy wings stuffed with a blue cheese filling, tossed in buffalo hot sauce and drizzled with ranch dressing.

P.A. & Gargantua (Montreal, QC)

Cheese aficionados have fallen in love with the offerings from this truck run by 20-something chefs Cedric Emond and Paul-AndrÃĐ PichÃĐ. Their cheesy creations include The Classic, made from pain de mie (French bread), 14-month-old aged Iles-aux-Grues cheddar and smoked butter. Don't expect ordinary grilled cheese, but massive, melty masterpieces loaded with decadent ingredients such as truffle mousse and shallot confit.

Gecko Bus (Dartmouth, NS)

A retrofitted school bus with a reptilian twist, the Gecko Bus is a Habaneros taco bar on wheels, and it’s kind of a no-brainer that a freaky-looking food truck resembling a giant gecko is tough to miss. The emphasis is on adventurous flavour combinations, and devotees of the mean, green bus swear by such favourites as pulled pork carnitas and Bombay vegan lentil curry.

Blake (Canmore AB)

This restaurant on wheels takes the phrase "super-sized" very seriously, serving up sensational street eats from a double-decker food truck that's also a sit-down, eat-in restaurant. The truck isn't the only thing out of the ordinary about Blake, which offers such unique dishes as organic northern divine caviar on brioche, Haida Gwaii scallops served with hominy grits and cumin popcorn, and the king and dungeness crab served with ricotta gnudi, brown butter, black truffle honey and grana padano.

Aussie Pie Guy (Vancouver, BC)

Pie isn't exactly known as a street food, but serving up savoury Australian-style meat pies has been a winning strategy for street-food success thanks to the ingenious menu items. The Trifecta boasts minced beef with chunks of BC double smoked bacon and layers of cheddar in a rich gravy, all baked inside a flaky pie crust.

Totwheels ( Winnipeg, MB)

Specializing in crispy-on-the-outside, fluffy-on-the-inside gourmet tater tots, the Totwheels food truck is the creation of Chef Darryl Crumb, who competed on Top Chef Canada. As you'd expect, toppings are inventive and change with the seasons, including such outside-the-box offerings as escargot, sweetbreads, foie gras, and seared pickerel cheeks topped with roe, pickled ginger and wasabi mayonnaise. In fact, Totwheels' signature dish is Le Renault, in which tater tots are topped with crispy fried frog legs, green beans, mushrooms and feta cheese.
