While in New York for the Damn Delicious book tour, Rhee stopped by the Delish kitchen to show us exactly how she makes these mini deep-dish pizzas, which feature an ingenious hack for getting the crust just the right size: Use an empty 14.5 to 15-ounce can. Wiggle it on a flour tortilla, and you've got a perfect circle that's just the right size to fit into a muffin tin.

Some might balk at using tortillas for a pizza crust, but trust us: When marinara, gobs of mozzarella and parmesan cheese and mini pepperoni are added, you'll never notice the difference. It's the kind of shortcut that buys you a few minutes to relax—or pop a bottle of bubbly—before people come over.
