Cheese aficionados have fallen in love with the offerings from this truck run by 20-something chefs Cedric Emond and Paul-André Piché. Their cheesy creations include The Classic, made from pain de mie (French bread), 14-month-old aged Iles-aux-Grues cheddar and smoked butter. Don't expect ordinary grilled cheese, but massive, melty masterpieces loaded with decadent ingredients such as truffle mousse and shallot confit.
