Four Seasons Guests Now Can Choose From 25 Delectable Vegan Dishes

If you’re someone who often stays at the Four Seasons hotel, we have some exciting news for you — your luxury resort just got a whole lot tastier! Brand new vegan menu offerings will be available to guests at the chain’s Punta Mita resort located in Mexico’s Riviera Nayarit.

Four Seasons partnered with vegan chef and healthy living educator Leslie Durso has partnered with the hotel chain to develop 25 plant-based dishes that will be served at three Punta Mita resort restaurants — Aramara, Bahia by Richard Sandoval, and Ketsi. The vegan dishes developed by Durso are locally-inspired and will be available at both the resort’s signature dining destinations and through in-room dining services.

“Four Seasons Resort Punta Mita is truly paradise so it was important to create dishes from locally sourced ingredients in a way that honors Mexican culture and also brings it into the plant-based world,” Durso said in a press release. “I wanted to ensure the recipes would seamlessly align with the resort’s current offerings at each restaurant and worked closely with the wonderful team of chefs to create dishes that are tasty, healthy and familiar.”

The vegan fajitas below are now part of the Four Season’s casual all-day dining restaurant Ketsi’s menu.

At Aramara, the Four Seasons’ restaurant that features Asian influences blended with a taste of Mexico, the new plant-based fare will include green coconut milk curry, stir-fried quinoa with crispy tofu, and sun-dried tomato sushi rolls, which will be served daily for dinner.

The resort’s contemporary seafood-centric grill located on Las Cuevas beach, called Bahia by Richard Sandoval, will serve vegan confit cherry tomato with zucchini satay and eggplant cannelloni daily for dinner.

Finally, at Kesti, the Four Seasons’ casual all-day dining restaurant, patrons will now be able to order plant-based additions such as crispy tofu tacos and portobello asado fajitas, served daily for breakfast, lunch, and dinner.

This Turmeric Coconut Milk Curry With Vegetables by Courtney West is flavorful and herbaceous.

Packed with Asian eggplant, tangled green and purple long beans, and a voluminous bunch of both sweet potato greens and basil, this hot and steamy curry is perfect for warding off the cold weather vibes. The curry base is made from creamy coconut milk and turmeric with a pinch of red pepper flakes for heat. This curry is adaptable to whatever vegetables you have available in your area, so stick to the veggies in the recipe or add whatever is seasonally available to you.

This Za’atar Grilled Eggplant Salad by Jodi Kay combines softly grilled eggplants and lots of fresh herbs.

Make a big batch since cold leftovers make great pita fillings with hummus and extra greens. Serve with a big squeeze of lemon for a refreshing kick.

These Mushroom and Pepper Fajitas With Spiced Cashew Cream Sauce by Molly Patrick are casual, quick, and tasty.

These fajitas are going to become a favorite in your house. A medley of sautéed vegetables are tucked neatly into a corn tortilla, then topped with avocado, cilantro, and a spicy cashew cream sauce. Leave some of the zesty sauce on the side for dipping tortilla chips!
