You Better Believe These Mini Deep-Dish Pizzas Are Damn Delicious

...And not just because that's the name of the blog that created them.

Chungah Rhee has finally uncovered the secret to a low-calorie, deep-dish pizza: Make the whole pie smaller than the size of your palm. It's serious portion controlβ€”if you could only restrict yourself to just having a couple.

But, quite honestly, that's like asking BeyoncΓ© not to drop secret visual albums. It's not going to happen. These Honey, I Shrunk the Kids-style pizzas are just too cheesy to resist. In fact, they're a pretty accurate reflection of Rhee's brand, Damn Delicious, as a wholeβ€”fast, easy recipes that you can't get enough of. It was that basic premise that inspired her blog, which she started as a graduate student at the University of Southern California back in 2011.

"My whole philosophy is, 'the easier, the better.' The less dishes to clean, the better," Rhee says. "Oh, and using ingredients you already have on hand. That's what I think of when I'm brainstorming recipes."

While in New York for the Damn Delicious book tour, Rhee stopped by the Delish kitchen to show us exactly how she makes these mini deep-dish pizzas, which feature an ingenious hack for getting the crust just the right size: Use an empty 14.5 to 15-ounce can. Wiggle it on a flour tortilla, and you've got a perfect circle that's just the right size to fit into a muffin tin.

Some might balk at using tortillas for a pizza crust, but trust us: When marinara, gobs of mozzarella and parmesan cheese and mini pepperoni are added, you'll never notice the difference. It's the kind of shortcut that buys you a few minutes to relaxβ€”or pop a bottle of bubblyβ€”before people come over.

Just make sure you don't skimp on the mini pepperoni. That's the real must with this recipe, Rhee says.

"I'm obsessed with mini pepperoni. I would put that stuff on anything," Rhee says. "They're impossible to find sometimes, but anytime I see them at the grocery store, I'll buy, like, five bags, because their expiration date isn't too soon, so you can stock up on them."
